More Apples So Canning Homemade Apple Pie Filling!

So one of the apple trees was blown down by a storm and here we are with more apples to can. We decided this round would be my Homemade Apple Pie Filling. See what we did…

100_2705 This is about half of what we canned one night! A lot of work, but well worth it. Now I am down to drying a few apples, at least for two weeks when the other tree is ready to pick.!

Until then I will share this recipe

Homemade Apple Pie Filling

Ingredients (this recipe will do about 5- 6 qts)

      • 1 cup apple cider vineger
      • 6 cups water
      • 2 cups sugar ( sweetener)I substitute (sweeten to taste)
      • 1 1/2 tsp ground cinnamon
      • 1 1/2 tsp ground nutmeg
      • 1 1/2 tsp ground clove
      • 1 1/2 cup cornstarch
      • 1 1/2  tsp vanilla
      • 12 cups apples, cored, peeled, and sliced

Instructions

In large saucepan, combine water, vineger, sugar, cinnamon, nutmeg, clove, and cornstarch. Stir constantly over medium heat until thick and bubbly. Remove from heat and stir in vanilla. Now You can also add your apples in the mixture  and put in sterilized jars or pack them in  jars as I do – then pour mixture over the packed apples. As I do this I use a wooden spoon to lightly press apples down to make sure I have a full jar.

When done put lids on and process for 15 minutes in hot water bath canner.

So if you have an extra amount of apples this season and want a fresh tasting Apple Pie in about mid-winter… this is the way to go!
