Perfect TortillaFor Christmas I got these awesome Perfect Tortilla Bowl Pans. Whether you make your own tortillas or buy them pre-made, you can find these pans will form the perfect bowl. Just fill your tortilla bowl with a taco salad, fruit mix, veggies, or whatever you choose. The possibilities are endless. I decided to make a sauteed veggie salad my first time using these pans.
First I made homemade tortillas.

Home Made Tortillas

  • 1 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup water
  • 3 tablespoon Olive oil (or oil of choice)

In a large bowl, combine flour and salt. Stir in water and oil. Turn onto a floured surface; knead 10-12 times, adding a little flour or water if needed to achieve a smooth dough. Let rest for 10 minutes.
Divide dough into 4 portions. On a lightly floured surface, roll each portion into a 7 to 8 inch circle. ( 7 inches works best for my tortilla bowl pans)
In a large nonstick skillet covered with cooking spray, cook tortillas over med to low heat for about a  minute on each side. Keep warm. Makes 4 tortillas.

Tortilla Bowl  and Veggie Salad

veggie filling

Ingredients for Veggie Salad

  • Olive oil
  • 1 cup zucchini Chopped
  • 1/2 medium onion, chopped
  • 1 garlic clove, chopped
  • 1 large  mild green chile, chopped (Discard seeds and stem)
  • 1/2 fresh jalapeño chile pepper, Chopped fine (Discard seeds and stem)
  • Salt
  • Dash of ground cumin
  • Dash of ground oregano
  • 1 small tomato, chopped
  • 1/2 cup cheddar cheese
  • 1/4 cup cotija cheese (Can use Parmesan OR Romano OR anejo cheese OR feta cheese)
  • a couple sprigs of fresh cilantro, chopped

Heat oil in a large sauté pan on medium to high heat. Add  zucchini, onions, garlic, green chiles, and jalapeño and sprinkle with salt and cumin. Coat the vegetables with the oil in the pan. Then spread the veggies out and stir  occasionally until they are all  browned. Stir in the chopped tomatoes and oregano, lower the heat to low. Let simmer for several minutes while you are preparing the tortillas.

Directions for bowls:

1 Preheat oven to 400 degrees.
2 Press tortilla into your Perfect Tortilla pan.  Bake about 10 minutes (or until brown).
4 Move tortilla to a cooling rack and repeat with remaining tortillas.

Spoon some of the cooked veggie filling into your tortilla bowls. Add your chopped cilantro and cheese. Serve immediately.

(sorry for not having a final picture, it’s just that these were gone by the time I realised the flash did not work)

This is an awesome tool. When I see the recipe, the first thing I’m wondering is what will happen if I use a gluten free flour or like a coconut or almond flour. I wonder if the quantities for ingredients would be the same. One day I will have to try it! Thanks so much for sharing!
