Blackberry Bisquick Muffins! Quick, Easy and Tasty!

Blackberries have been abundant this year so we have been taking advantage of this bountiful harvest. Tonight we were craving something sweet, but somewhat healthy. Since we always have Betty Crocker Heart Smart Bisquick baking mix on hand, I figured blackberry Bisquick muffins would be a good choice. This is a quick and easy recipe… PLUS they tasted awesome!



2 cups Bisquick
1/3 cup sugar/sweetener
2/3 cup milk
2 tablespoons coconut oil
1 egg
3/4 cup fresh washed blackberries


Preheat oven to 400 degrees.
Grease muffin pan.
Stir all ingredients (except blackberries) in bowl  until moist.
Stir in berries.
Divide batter evenly in 9 muffin cups (fill each about half full).
Bake about 15 minutes or until muffins are golden brown.
Cool, remove from pan, and ENJOY!
