Blackberry and Honey Glaze!

100_4012We have wild hog, blackberries, and of course the fresh honey from my Aunt Verna and Uncle Jack’s hives. You know I gotta make something with this. We got a couple small wild hogs the other day and it has been fun preparing it in different ways. You can read my other post about how we came up with the hogs HERE.

Now just look at that golden honey>>>>> Awesome!

So in the oven my selected cuts of wild hog goes to cook for a little bit. It doesn’t take long since my hubby smoked the hogs right after we killed them. About 20 minutes before I am ready to take them out of the oven, I baste with the glaze (I save just a little bit to pour over the meat after we cut it). Here is the recipe for you and let me say this will work on any type of meat you choose.

Blackberry and Honey Glaze


  • 1/2 cup Blackberry Syrup (blackberry syrup recipe HERE)
  • 1/3 cup Honey
  • 1 tablespoon  Brown Sugar
  • 1 teaspoons dry mustard
  • 1/2 teaspoon ground cardamom
  • 1/2 teaspoon ground coriander

Combine all ingredients  stir well.  Baste meat close to end of cooking so you don’t  burn the glaze. I then pour the little bit of glaze I saved over the meat and it is BEAUTIFUL!


OH… and tasty, too!

    Glad your finding good use for your honey we sent down to you. It is good as always this year. Just wish we hadn`t lost 5 hives over the winter. We have way more customers than we have honey this year.

    My dad used to hunt wild hogs from time to time, but I don’t remember how my mom cooked them! Since we don’t have any wild hog anymore, I think I’ll try this glaze on our next ham. Or maybe some chicken?
